Tempura Batter

Method

Prepare the Avocados

Cut the avocados in half, remove the pit, and slice them into wedges.

Make the Tempura Batter

In a bowl, mix the all-purpose flour, cornstarch, and baking powder.

Slowly add cold water and mix until just combined. It's okay if the batter is a little lumpy. Add ice cubes to keep it cold.

Prepare the Tempura Sauce

In a small saucepan, combine soy sauce, mirin, and dashi stock. Heat gently and stir well.

Remove from heat and mix in grated daikon radish. Set aside.

Fry the Avocado

In a deep pan or fryer, heat vegetable oil to 350°F (175°C).

Dip avocado wedges into the tempura batter, allowing excess batter to drip off.

Carefully place the battered avocado in the hot oil and fry until golden brown, about 2-3 minutes.

Remove from oil and drain on paper towels.

Serve

Serve the avocado tempura hot with the tempura sauce on the side for dipping.
