Harvesting the Grapes

Carefully harvest the Pinot Grigio grapes at optimal ripeness, ensuring they are free from rot and disease.

Crushing the Grapes

Crush the harvested grapes to release the juice. This can be done manually or using a grape crusher.

Pressing the Juice

Transfer the crushed grapes to a wine press to extract the juice. Collect the juice in a sanitized fermentation vessel.

Fermentation

Add wine yeast to the juice and stir gently. Seal the fermentation vessel with an airlock and allow it to ferment at a controlled temperature (around 18-20°C) for 2-4 weeks.

Racking

Once fermentation is complete, rack the wine into a clean vessel, leaving sediment behind. Add sulfur dioxide to help preserve the wine.

Aging

Allow the wine to age in stainless steel or oak barrels for several months to develop flavor. Monitor the wine regularly.

Bottling

Once aged, filter the wine and bottle it. Cork the bottles and store them in a cool, dark place until ready to enjoy.
