Heat 5 gallons of filtered water to around 165°F (74°C). Add the crushed grains to the water and maintain a temperature of 150°F (65°C) for 60 minutes.

Mash the Grains

Sparging

Bring the wort to a boil and add 1 oz of Cascade hops. Boil for 60 minutes, adding Centennial hops with 15 minutes left and Willamette hops with 5 minutes remaining.

Cool the wort to around 70°F (21°C) and transfer it to a fermentation vessel. Pitch the yeast and ferment for 1-2 weeks.

After fermentation is complete, bottle the beer with a priming sugar solution to carbonate. Let it condition for another 1-2 weeks before enjoying.

In a large brew kettle, heat 10 cups of water to 165°F (74°C). Add the Munich malt, Pilsner malt, and Carafa Special malt. Maintain the temperature at 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water to collect about 6 gallons of wort.

Bring the wort to a boil, then add Hallertau hops. Boil for 60 minutes.

Boiling

Cool the wort quickly using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Ferment at 50°F (10°C) for two weeks.

Fermentation

After fermentation, dissolve priming sugar in a small amount of water and add it to the beer before bottling. Bottle the beer and cap securely.

Bottling

Allow the bottles to condition at room temperature for 1-2 weeks, then refrigerate and enjoy.

After mashing, drain the liquid (wort) from the grains into a kettle, sparging with additional hot water to extract more sugars.

Lautering

Bring the wort to a boil. Add the Cascade hops at the beginning of the boil and the Centennial hops with 15 minutes left in the boil. Boil for a total of 60 minutes.

Cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the American Ale yeast. Seal with an airlock and allow to ferment for 1-2 weeks at room temperature.

Once fermentation is complete, mix the priming sugar with a small amount of water and add it to the beer. Bottle the beer and cap it, allowing it to carbonate for another 1-2 weeks.

In a large pot, bring 4 cups of water to a boil. Add the barley malt and corn sugar, stirring well to dissolve.

Boil the Base

Once the mixture is boiling, add the hops and allow to simmer for about 15 minutes.

Once cooled, add the yeast, lemon zest, grated ginger, and a pinch of salt. Stir gently to combine.

Transfer the mixture to a fermentation vessel and allow it to ferment in a cool, dark place for about 5 to 7 days.

After fermentation, transfer the mixture to bottles, leaving some space at the top. Seal the bottles and let them carbonate for another 3 to 5 days.
