Winemaking Process

Harvesting

Harvest the Sauvignon Blanc grapes from the vineyard when they are perfectly ripe.

Crushing and Pressing

Crush the grapes and press them to extract the juice.

Fermentation

Transfer the juice to a fermentation vessel, add yeast, and allow it to ferment at a controlled temperature for 2-3 weeks.

Clarification

After fermentation, clarify the wine by letting it settle, then rack it off the lees.

Aging

Age the wine in stainless steel tanks or oak barrels for 6-12 months to develop flavors.

Bottling

Filter and bottle the wine, making sure to add sulfites to preserve it.
