Method
Barbacoa Preparation
Prepare the meat
In a large pot, season the chuck roast with salt and black pepper. Sear it on all sides over medium-high heat until browned, about 5-7 minutes.
Cook the barbacoa
Pour the blended sauce over the seared meat, adding bay leaves. Cover and simmer on low heat for about 4-5 hours until the meat is tender and shreds easily.

Cook the yuca
In a large pot, bring water to a boil. Add yuca and cook until tender, about 20-25 minutes. Drain and let cool.
Fry the yuca
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Cut the cooled yuca into fry shapes and fry until golden and crispy, about 4-5 minutes. Drain on paper towels and sprinkle with salt.
