For the Gambas

Prepare the Ingredients

Peel and devein the shrimp if not already done. Mince the garlic and chop the scallions, separating the green tops from the white parts. Dice the tomato and set aside.

Sauté the Shrimp

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Corn and Shrimp

Add the corn to the skillet and cook for about 2 minutes, then add the shrimp. Season with salt and black pepper. Cook the shrimp for about 3-4 minutes until they turn pink and opaque.

Add Aromatics

Stir in the white parts of the scallions and diced tomato. Cook for another 2 minutes.

Make the Sauce

In a small bowl, whisk together the chipotle sauce and honey. Pour this mixture into the skillet, then add the white wine. Bring to a simmer and cook for about 3 minutes.

Finish with Cream

Add the heavy cream to the skillet and stir well. Let it simmer for an additional 2-3 minutes until the sauce thickens slightly.

For the Black Bean Mashed Potatoes

Cook the Potatoes

In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.

Mash the Potatoes

Once cooked, drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth.

Incorporate Black Beans

Fold in the black beans, salt, and black pepper into the mashed potatoes until well combined.
