Clean the Calamari
Start by cleaning the fresh calamari. Remove the head and innards, then peel the skin off. Cut the calamari into rings about 1/2 inch thick.
Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water, whisking until the batter is smooth and slightly thick.

Heat the Oil

Fry the Calamari
Dip the calamari rings into the batter, allowing any excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown.
Drain and Serve
Using a slotted spoon, remove the fried calamari from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and a sprinkle of fresh parsley.
