Make the Marinade

In a medium bowl, combine the olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice. Whisk together until well blended.

Marinate the Rib Eye

Place the rib eye steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the steaks, making sure they are well coated. Seal the bag or cover the dish with plastic wrap and let marinate in the refrigerator for at least 1 hour, or up to 24 hours for maximum flavor.

Prepare the Grill

Preheat the grill to high heat (about 450°F to 500°F). If using a charcoal grill, ensure the coals are hot and ashed over.

Grill the Rib Eye

Remove the rib eye steaks from the marinade and let any excess drip off. Place the steaks on the hot grill and cook for about 4-5 minutes on one side for medium-rare, or until your desired doneness is reached. Flip the steaks and grill for an additional 4-5 minutes.

Rest the Steaks

Once cooked to your liking, remove the steaks from the grill and transfer them to a plate. Cover loosely with foil and let them rest for about 5-10 minutes to allow the juices to redistribute.
