Prepare honey syrup

If you don't have honey syrup prepared: combine equal parts honey and warm water (for this recipe 1/4 cup honey + 1/4 cup warm water). Stir until fully combined and cool before using.

Add 2 oz Amaro del Capo, 0.5 oz fresh lemon juice, 0.5 oz honey syrup and 0.25 oz orange liqueur into a cocktail shaker.

Fill the shaker with ice (about 1 cup) until well chilled. Cap and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and very cold.

Double-strain into a chilled coupe glass or a rocks glass filled with fresh ice, depending on whether you prefer the drink neat or on the rocks.

Taste and adjust: if the cocktail is too bitter, add 0.25 oz more honey syrup and stir gently; if too sweet, add a few drops more lemon juice.

Garnish

Express the oils of a lemon twist over the finished cocktail by holding the twist skin-side down above the glass and giving it a quick squeeze so oils spray onto the surface.

Rub the lemon twist around the rim of the glass and drop it into the drink. Optionally, float a dehydrated orange wheel on top for visual appeal.
