Preparation

1

Prepare the Mamey Puree

Cut the fresh mamey fruit in half and remove the pit. Scoop out the flesh and place it in a blender. Blend until smooth to create a mamey puree.

2

Mix the Ingredients

In a cocktail shaker, combine the clairin, rhum, fresh mamey puree, lime juice, and simple syrup. Fill the shaker with ice.

3

Shake the Cocktail

Secure the lid on the shaker and shake vigorously for about 15-20 seconds until well chilled.

4

Strain and Serve

Strain the mixture into a chilled cocktail glass or over ice in a rocks glass. Optionally, garnish with a slice of mamey or a lime wedge.
