Method

Marinating the Chicken

Prepare the Marinade

In a medium bowl, whisk together olive oil, minced garlic, paprika, cumin, salt, black pepper, and lemon juice. This will be the marinade for the chicken.

Marinate the Chicken

Cut the boneless chicken breasts into 1-inch cubes and add them to the marinade. Stir well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours for better flavor.

Grilling the Chicken

Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C). You can also use a grill pan on the stovetop.

Skewering the Chicken

If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken cubes onto the skewers, leaving some space between each piece.

Grilling the Chicken

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Assembling the Pitas

Prepare the Pita

While the chicken is grilling, prepare the pita bread by warming them slightly on the grill or in a microwave. This makes them easier to fold.

Fill the Pita

Once the chicken is done grilling, remove it from the skewers and slice it into smaller pieces if desired. Take a warmed pita bread and fill it with mixed greens, diced tomato, cucumber, red onion, and the grilled chicken pieces.

Add Sauces

Top the filled pita with yogurt sauce or tzatziki, and add hot sauce to taste if desired.
