Wagyu Flat Iron Steak

Prepare the Steak

Season the Wagyu flat iron steak with olive oil, salt, and black pepper. Let it sit at room temperature for about 30 minutes.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

Rest the Steak

Remove the steak from heat and let it rest for 5-10 minutes before slicing.

Parmesan Fingerlings

Prepare the Potatoes

Preheat the oven to 400°F (200°C). Wash and halve the fingerling potatoes.

Season the Potatoes

Toss the potatoes with olive oil, garlic powder, salt, and black pepper in a bowl.

Roast the Potatoes

Spread the potatoes on a baking sheet and roast in the oven for 25-30 minutes, until golden and tender. Remove from the oven and sprinkle with Parmesan cheese.

Sauté the Chard

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add Swiss chard and sauté for 5-7 minutes until wilted. Season with salt and black pepper.

Boquerones Salmoriglio

Prepare the Salmoriglio

In a bowl, combine boquerones, chopped parsley, lemon juice, olive oil, and minced garlic. Stir to mix well.
