Spiced Pear Puree
Cook the pears
In a medium saucepan over medium heat, combine the diced pears, brown sugar, ground cinnamon, ground nutmeg, and water. Stir to combine.
Simmer
Bring the mixture to a simmer. Cover and cook for about 15 minutes, or until the pears are soft and tender.
Puree the mixture
Remove from heat and let cool slightly. Transfer to a blender and puree until smooth. Set aside.
Pomegranate and Balsamic Reduction
Combine ingredients
In a small saucepan, combine the pomegranate juice, balsamic vinegar, and honey.
Reduce the mixture
Bring to a boil over medium-high heat, then reduce heat to low and let simmer until the sauce thickens, about 10-15 minutes. Stir occasionally.
Cool the reduction
Once thickened, remove from heat and let cool slightly before using.
Final Assembly
Mix the components
In a large glass or pitcher, combine the spiced pear puree, pomegranate and balsamic reduction, and fresh lemon juice. Stir well to combine.
Add tonic water
Gently pour in the elderflower tonic water and stir to combine without losing the carbonation.
Garnish and serve
Pour into glasses, garnish with fresh mint leaves, and serve immediately over ice if desired.
