Method

Prepare Honey Syrup (if not ready)

Make honey syrup by combining equal parts honey and warm water (1:1). Stir until fully combined and cool to room temperature before using. Store leftover in refrigerator.

Build the Sacred Float

Mix spirit and sweetener

In a small mixing glass or shaker, combine 0.75 oz gin, 0.5 oz honey syrup, and 0.25 oz fresh lemon juice. Add 4 ice cubes if you want this component chilled and slightly diluted; stir for about 10 seconds or shake briefly (3–4 seconds) just to integrate and chill. Strain off ice into a chilled highball or pint glass if you used ice.

Add the Profane Edge

Add 0.5 oz aperitif liqueur (Aperol for lighter bitterness and orange, Campari for a stronger bitter note) and 2 dashes orange bitters to the same mixing glass and stir briefly to marry the herbal-bitter notes with the sacred float mixture. Strain into the serving glass if not already done.

Assemble the Shandy

Pour 6 oz lemonade into the serving glass with the spirit/aperitif mixture. Tilt the glass slightly and slowly top with 12 oz cold pilsner or light lager, pouring gently down a bar spoon or against the side of the glass to preserve carbonation and create a layered, effervescent effect. The beer will froth—leave room (about 1/2 inch) at the top to avoid overflow.

Garnish and Serve

Garnish with a lemon wheel clipped to the rim and a fresh mint sprig. Optionally grate 1/4 tsp lemon zest over the top for an extra aromatic lift. Serve immediately with a straw or stirrer so the drinker can blend the layers if desired.

Notes & Variations

Adjust balance: increase honey syrup for more sweetness, more aperitif for bitterness, or more lemon juice for brightness. For a non-alcoholic version, omit gin and aperitif and replace beer with a non-alcoholic lager or sparkling water and add 0.5 oz more honey syrup for body.
