Fish Batter Preparation

Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk until well combined.

Add Wet Ingredients

Gradually whisk in the beer and cold water until the batter is smooth and free of lumps. Set aside to rest for 10 minutes.

Fish Preparation

Prepare Fish

Pat the Atlantic cod fillets dry with paper towels. Season lightly with salt and pepper.

Heat Oil

In a deep fryer or large pot, heat the oil to 350°F (175°C).

Batter and Fry

Dip each fillet into the batter, ensuring it is fully coated. Carefully place the battered fish into the hot oil and fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Cut and Soak Potatoes

Peel and cut the potatoes into thick fries. Soak in cold water for at least 30 minutes to remove excess starch.

Fry Potatoes

In the same hot oil, fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt while hot.

Mix Tartar Sauce

In a small bowl, combine mayonnaise, finely chopped pickles, lemon juice, and dill weed. Mix well and refrigerate until ready to serve.

Serve the fried fish with seasoned fries, a side of tartar sauce, and lemon wedges for garnish.
