Method

Cooking the Pasta

Cook the Cavatappi Pasta

In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Making the Cheese Sauce

Prepare the Roux

In the same pot, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour and whisk continuously for 2-3 minutes to form a roux. It should turn slightly golden.

Add Milk and Beer

Gradually pour in the milk and bière blanche beer while whisking to prevent lumps. Continue to cook until the mixture thickens, about 5 minutes.

Incorporate the Cheeses

Remove the pot from the heat and add the shredded white cheddar cheese. Stir until melted and smooth. Season with garlic powder, onion powder, salt, and black pepper.

Combining and Serving

Combine Pasta and Sauce

Add the cooked cavatappi pasta to the cheese sauce and stir until well combined.

Add Optional Toppings

If desired, fold in cooked bacon, chicken, or steak into the mac and cheese for added flavor and protein.
