Potstickers Preparation
Prepare Filling
In a mixing bowl, combine the ground pork, finely chopped green onions (reserve a few for garnish), minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until all ingredients are well blended.
Fill Potstickers
Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water, fold the wrapper over to create a half-moon shape, and press the edges to seal. Repeat this process with the remaining wrappers and filling.
Bourbon Glaze Preparation
Make the Glaze
In a small saucepan, combine the bourbon, brown sugar, soy sauce, and rice vinegar over medium heat. Stir until the sugar dissolves.
Thicken the Glaze
In a separate small bowl, mix cornstarch with water to create a slurry. Slowly add this to the saucepan while stirring. Continue to cook until the glaze thickens, about 2-3 minutes. Remove from heat and set aside.
Cooking Potstickers
Pan-fry Potstickers
Heat a non-stick skillet over medium heat and add a tablespoon of oil. Place the potstickers in the skillet, making sure they are not touching. Cook for 2-3 minutes until the bottoms are golden brown.
Steam Potstickers
Add 1/4 cup of water to the skillet, cover with a lid, and let them steam for 5-7 minutes until the water evaporates and the potstickers are cooked through.
Coat with Bourbon Glaze
Remove the lid and pour the bourbon glaze over the potstickers. Let them cook for another 1-2 minutes until the glaze is sticky and coats the potstickers.
Serving
Garnish and Serve
Transfer the potstickers to a serving platter. Sprinkle with sesame seeds and finely sliced green onions. Serve hot with extra bourbon glaze on the side if desired.
