Seafood Avocado Cocktail

This could very well be the ultimate seafood cocktail, served with a light-bodied sauce instead of the typical red glop. With lots of vegetables to balance the chunks of shrimp and crab, it can be served as a salad as well as a palate- and eye-pleasing appetizer.

Preparation

1

Prepare the Prawns

Bring a large pot of salted water to a boil. Add the jumbo prawns and cook for about 3-4 minutes or until they turn pink and opaque. Remove them from the pot and immediately transfer them to a bowl of ice water to stop the cooking process.

2

Chop the Celery

While the prawns are cooling, wash and chop the celery stalks into small, bite-sized pieces.

3

Prepare the Serving Dish

In a large serving bowl, layer the shredded lettuce as the base for the shrimp cocktail.

Assembly

4

Combine Ingredients

Once the prawns have cooled, peel and devein them if necessary. Arrange the prawns on top of the shredded lettuce.

5

Add Celery

Scatter the chopped celery over the prawns for added crunch and flavor.

6

Serve with Cocktail Sauce

Serve the shrimp cocktail with a bowl of cocktail sauce on the side for dipping. Enjoy!
