Polenta Puree

Prepare the Polenta

In a medium saucepan, bring 4 cups of water to a boil. Add salt.

Cook the Polenta

Gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, until thickened (about 20-25 minutes).

Finish the Polenta

Remove from heat and stir in butter and Parmesan cheese until smooth. Set aside.

Olive Oil Braised Greens

Heat the Olive Oil

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté the Garlic

Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Greens

Add the chopped kale or Swiss chard to the skillet. Stir to coat with oil and garlic.

Cook the Greens

Pour in the vegetable broth, cover, and cook for about 5-7 minutes, until the greens are wilted. Season with salt and black pepper to taste.

Assembly

Plate the Dish

On a serving plate, spread a generous layer of the polenta puree.

Add Greens

Top the polenta with the olive oil braised greens.

Drizzle Honey

Drizzle honey over the greens.

Serve with Chowchow

Serve alongside chowchow for added flavor.
