Sponge Cake Preparation

Preheat the oven

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.

Mix dry ingredients

In a bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Whisk eggs and sugar

In another large bowl, whisk together the eggs and granulated sugar until light and fluffy.

Combine ingredients

Gradually add the dry ingredients to the egg mixture, stirring gently until just combined. Add the vanilla extract.

Bake

Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.

Espresso Mixture Preparation

Brew espresso

Brew 1 cup of strong espresso coffee and let it cool.

Mix with liqueur

In a bowl, combine the cooled espresso, coffee liqueur (if using), and granulated sugar, mixing well until the sugar dissolves.

Mascarpone Filling Preparation

Whip cream

In a mixing bowl, whip the heavy cream until soft peaks form.

Combine mascarpone

In another bowl, mix mascarpone cheese with powdered sugar and vanilla extract until smooth.

Fold in whipped cream

Gently fold the whipped cream into the mascarpone mixture until well combined.

Assembly and Topping

Layer sponge cake

Cut the cooled sponge cake into fingers or squares. Dip each piece briefly in the espresso mixture and layer them in a serving dish.

Add mascarpone filling

Spread half of the mascarpone filling over the first layer of sponge cake. Repeat with another layer of dipped sponge cake and the remaining mascarpone filling.

Chill

Cover and refrigerate for at least 4 hours, preferably overnight.

Serve

Before serving, dust the top with cocoa powder and add chocolate shavings if desired.
