Prepare glass

Chill a rocks glass by filling with ice and set aside. If you want a salted rim, pour smoked sea salt (or kosher salt) onto a small plate. Run a lime wedge around the glass rim and dip the rim into the salt to coat lightly. Discard ice from glass before serving.

Make agave syrup (if needed)

If you don't have agave syrup, combine equal parts agave nectar and warm water (1:1) and stir until fully blended. Allow to cool before using. (This recipe uses 0.5 oz per cocktail.)

Mixing the Cocktail

Combine spirits and modifiers

Add 2 oz mezcal (or other smoky agave spirit), 0.5 oz reposado tequila, 0.25 oz orange liqueur, 0.5 oz agave syrup, 0.75 oz fresh lime juice, and 2 dashes bitters into a cocktail shaker.

Add ice and shake

Fill the shaker about two-thirds full with ice. Secure the lid and shake vigorously for 10–15 seconds, until the outside of the shaker is cold and slightly frosted.

Double strain

Discard the ice from the chilled salt-rimmed rocks glass. Using a julep or Hawthorne strainer and a fine strainer, double-strain the cocktail into the glass over one large ice cube or fresh ice. Double-straining removes small ice shards and citrus pulp for a smoother drink.

Garnish & Finish

Express oils

Hold a thin strip of orange peel over the drink and give it a firm twist to express the oils across the surface. Optionally rub the peel around the rim for extra aroma, then drop it into the glass.

Add lime

Garnish with a lime wheel or wedge on the rim or floated in the drink. Serve immediately.
