Activate yeast

In a small bowl, combine warm water (about 100–110°F / 38–43°C) and the brown sugar or molasses. Sprinkle the active dry yeast over the surface, gently stir once, and let sit for 5–10 minutes until foamy. If it doesn't foam, the yeast may be inactive — start again with fresh yeast.

Mix dry ingredients

In a large mixing bowl, whisk together the whole rye flour, bread flour, salt, and caraway seeds (if using) until evenly distributed.

Combine to form dough

Make a well in the dry ingredients and pour in the foamy yeast mixture and the softened butter or oil. Stir with a wooden spoon or dough hook until the mixture comes together into a shaggy dough. Because rye flour has less gluten, the dough will be denser and stickier than typical wheat dough.

Knead

Turn the dough onto a lightly floured surface (use bread flour) and knead gently for 6–8 minutes, or use a stand mixer with a dough hook on low for 4–6 minutes. Aim to develop some structure — the dough should become smoother but will remain somewhat tacky. Add up to 1–2 tbsp bread flour if it is excessively sticky.

First rise

Form the dough into a ball and place it in a lightly oiled bowl, turning once to coat. Cover with plastic wrap or a clean towel and let rise in a warm draft-free place until doubled in size, about 1 to 1½ hours depending on room temperature.

Shaping and final rise

Gently deflate the risen dough and turn it out onto a lightly floured surface. Shape into a round or oblong loaf by folding edges into the center and tightening the surface with your hands to create surface tension. Place the shaped loaf seam-side down on a parchment-lined baking sheet or into a lightly greased loaf pan.

Cover loosely with a clean towel or oiled plastic wrap and let the shaped loaf rise until puffy and nearly doubled, about 45–60 minutes. Meanwhile preheat the oven to 425°F (220°C) with a rack in the middle. If you plan to create steam, place a shallow metal pan on the bottom rack while preheating.

Finish and bake

Just before baking, score the top of the loaf once or twice with a sharp knife or lame to control expansion. If using, brush the top lightly with 1–2 tbsp water and sprinkle the oats or cracked rye for a rustic finish.

Place the loaf on the middle rack. If creating steam, pour ½ cup hot water into the preheated shallow pan on the bottom rack immediately after placing the loaf in the oven (be careful of steam). Bake at 425°F (220°C) for 10 minutes, then reduce temperature to 400°F (200°C) and bake another 20–25 minutes, or until the crust is deep golden-brown and the internal temperature reaches 200–205°F (93–96°C). Total bake time ~30–35 minutes depending on loaf size.

Remove the bread from the oven and transfer to a wire rack. Let cool completely (at least 1 hour) before slicing so the crumb finishes setting.

Slice and serve with butter, smoked fish, strong cheeses, or use for sandwiches. Rye keeps well wrapped at room temperature for 2–3 days or frozen for longer storage.
