Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.

In a mixing bowl, beat cream cheese and butter together until creamy. Gradually add powdered sugar and vanilla extract, mixing until smooth.

In a mixing bowl, combine pureed beets, heavy cream, milk, sugar, vanilla extract, and sea salt. Mix until well combined.

Chill the mixture in the refrigerator for at least 2 hours, then churn in an ice cream maker according to manufacturer's instructions.

Once the cakes are cooled, spread a layer of cream cheese frosting between the layers and cover the top and sides with remaining frosting.
