Kombucha Preparation

Brew the Tea

Boil 4 cups of water and steep tea bags in it for about 15 minutes. Remove the tea bags and stir in the sugar until dissolved.

Combine Ingredients

In a large glass jar, combine the tea mixture with 4 cups of cool water. Allow the mixture to cool to room temperature.

Add SCOBY

Once the tea mixture is cool, add the starter tea and gently place the SCOBY on top. Cover the jar with a cloth and secure it with a rubber band.

Ferment

Let the kombucha ferment in a warm, dark place for about 7-14 days, tasting it every few days until it reaches your desired flavor.

Bottle and Refrigerate

Once fermented, remove the SCOBY and bottle the kombucha, leaving some space at the top. Refrigerate until ready to use.

Mix the Cocktail

In a cocktail shaker, combine the vodka, Lillet Blanc, fresh lemon juice, and ice. Shake well until chilled.

Serve

Strain the mixture into a glass filled with ice and top with the house-made kombucha. Garnish with a sprig of fresh mint.
