Tater tots
Preheat oven to 425°F (220°C). Spread 2 cups frozen tater tots in a single layer on a baking sheet. Bake 18–22 minutes, turning once halfway, until golden and crispy. Keep warm.
Cheese grits (from scratch or instant)
If using prepared cheese grits, reheat 1 cup cooked grits gently in a saucepan over low heat, adding a splash of water or milk if too thick. For fresh/instant: bring 1.5 cups water or milk to a simmer in a small saucepan, whisk in 1 tablespoon grits, reduce to low and cook per package (usually 3–5 minutes for instant, 20–25 for stone-ground), stirring frequently until thickened. Stir in 1/4 cup shredded cheddar, 1/4 tsp salt and 1/8 tsp black pepper. Keep warm.
Protein (choose one)
Crispy bacon: In a skillet over medium heat, cook bacon slices 3–5 minutes per side until crisp. Transfer to paper towel to drain and chop or crumble. Sausage patty: Cook preformed breakfast sausage patty in skillet over medium for 4–5 minutes per side until internal temperature reaches 160°F (71°C); quarter before plating. Chorizo: Crumble and cook in skillet over medium heat 5–7 minutes until browned and cooked through. Ham/turkey slices: Warm briefly in skillet or microwave until just heated.
Eggs
Preheat a nonstick skillet over medium-low heat and add 1 tablespoon butter or oil. Crack two large eggs into the pan. For fried eggs with set whites and runny yolks: cook undisturbed 3–4 minutes until whites are set; cover for 30–60 seconds if whites near yolk are still translucent. For over-easy: cook 2–3 minutes until whites set, flip gently and cook 10–20 seconds more. Season with 1/8 tsp salt and a pinch of pepper. Remove eggs to a paper towel-lined plate and keep warm.
Assembly & Toppings
Place chosen base on a serving plate or shallow box/container: spread the 2 cups crispy tater tots in a single layer or spoon 1 cup cheese grits into the center. Arrange the chosen protein evenly over the base.
Place the two fried eggs on top of the protein/base, spacing so both are visible.
Sauce & cheese
Drizzle 3 tablespoons Boom Boom sauce evenly over the eggs and protein. Sprinkle 1/2 cup shredded sharp cheddar cheese over the hot components so it melts slightly.
Garnish with 2 tablespoons thinly sliced green onions. Add optional hot sauce and adjust salt & pepper to taste.
Serve
Serve immediately while eggs are warm and cheese is melty. Provide extra Boom Boom sauce on the side if desired.
