Pie Crust
Prepare the Pie Crust
In a large bowl, combine the flour and salt. Add the cold, cubed butter and work it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.
Chill the Dough
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Apple Filling
Prepare the Apple Filling
In a large mixing bowl, combine the sliced apples, brown sugar, cinnamon, lemon juice, and melted butter. Toss until the apples are well coated.
Roast the Apples
Spread the apple mixture onto a baking sheet and roast in a preheated oven at 350°F (175°C) for about 20 minutes, until the apples are soft.

In a saucepan over medium heat, melt the granulated sugar until it turns a golden brown color, stirring occasionally.
Add Cream and Butter
Remove from heat and carefully add the heavy cream and butter. Stir until smooth, then add a pinch of salt. Set aside to cool slightly.

In a bowl, mix together the flour, oats, brown sugar, and cinnamon. Add the cold, cubed butter and use your fingers to mix until crumbly.
Assemble and Bake
Assemble the Pie
Preheat your oven to 375°F (190°C). Pour the roasted apple filling into the prepared pie crust, drizzle with caramel sauce, and sprinkle the streusel topping over the apples.
Bake the Pie
Bake in the preheated oven for 45-50 minutes, until the streusel is golden brown and the filling is bubbly.
Cool and Serve
Allow the pie to cool for at least 30 minutes before slicing. Serve warm or at room temperature.
