Prepare the Smoked Chicken
Marinate the Chicken
In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs and coat them well with the marinade. Cover and let them marinate for at least 1 hour in the refrigerator.
Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).
Smoke the Chicken
Once the smoker is ready, place the marinated chicken thighs on the grill grates. Add the soaked wood chips to the smoker box and close the lid. Smoke the chicken for 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C).
