Prepare Burger Patties

Grate Zucchini

Using a grater, grate the zucchini into a bowl and squeeze out excess moisture with a clean kitchen towel.

Mix Ingredients

In a large bowl, combine the grated zucchini, drained chickpeas (mashed slightly), breadcrumbs, minced garlic, cumin, salt, black pepper, and egg. Mix until well combined.

Form Patties

Shape the mixture into 4 equal-sized patties.

Cook Patties

In a non-stick skillet over medium heat, cook the patties for about 5-6 minutes on each side until golden brown. Remove from heat and set aside.

Roast Tomato and Mushroom Topping

Preheat Oven

Preheat your oven to 400°F (200°C).

Prepare Vegetables

On a baking sheet, toss cherry tomatoes and sliced mushrooms with olive oil, salt, black pepper, and balsamic vinegar.

Roast in the preheated oven for about 15-20 minutes, or until the tomatoes are blistered and mushrooms are tender.

Toast the burger buns lightly on a skillet or in an oven.

On the bottom half of each bun, place a patty, top with roasted tomatoes and mushrooms, add a few arugula leaves, and a slice of Swiss cheese.
