Method

Preparation and Cooking

1

Prepare the Escargot

Preheat the oven to 375°F (190°C). In a bowl, combine the escargot with melted butter, minced black garlic, chopped parsley, salt, and black pepper. Mix well and set aside.

2

Bake the Escargot

Place the escargot mixture in a baking dish and bake for 15-20 minutes, until the escargot are heated through and the butter is bubbling.

3

Prepare the Ratatouille

In a small saucepan, warm the prepared ratatouille over low heat until heated through, stirring occasionally.

4

Prepare the Panisse

Slice the prepared panisse into strips or rounds. In a skillet, heat olive oil over medium heat and fry the panisse until golden brown on both sides. Set aside.

5

Fry the Crispy Garlic

In the same skillet, add thinly sliced garlic cloves and fry until golden and crispy. Remove and drain on paper towels.

6

Serve

On a serving plate, create a bed of ratatouille, place the escargot on top, and arrange the fried panisse around it. Garnish with crispy garlic.
