Preparing Ice Cream

Make the Ice Cream Base

In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves. In a separate bowl, whisk the egg yolks. Gradually pour the warm cream mixture into the egg yolks while whisking continuously. Return the mixture to the saucepan and cook over low heat until thickened. Remove from heat and stir in the vanilla extract. Cool and refrigerate for at least 4 hours or overnight.

Churn the Ice Cream

Once the base is chilled, churn it in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.

Make the Sorbet Base

In a saucepan, combine the water and sugar. Heat until the sugar is dissolved. Remove from heat and mix in the fruit puree and lemon juice. Chill the mixture in the refrigerator.

Churn the Sorbet

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a container and freeze until solid.
