Prepare the Feta

Preheat the oven to 180°C (350°F). Place feta cheese in a baking dish, drizzle with olive oil, and sprinkle with dried oregano and black pepper. Bake for 20 minutes until soft and golden.

Make the Goat Cheese Cakes

In a bowl, mix goat cheese and salt until smooth. Form into small patties. Dredge each patty in flour, dip in beaten egg, and coat with panko breadcrumbs. Heat olive oil in a skillet over medium heat and fry until golden brown on both sides, about 3-4 minutes per side.

Prepare the Salad

Wash and dry mixed greens. Slice cucumber, Hau'ula tomatoes, and onion. In a large bowl, combine mixed greens, cucumber, tomatoes, and onion. Drizzle with white balsamic dressing and toss gently.
