Champagne Crème Anglaise Preparation
Prepare the Egg Mixture
In a medium mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and fluffy.
Heat the Milk and Cream
In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is just about to boil, then remove from heat.
Cook the Mixture
Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).
Add Champagne and Vanilla
Once thickened, remove from heat and stir in the champagne and vanilla extract. Allow to cool to room temperature and then refrigerate until chilled.
Wild Berries Preparation
Prepare the Berries
Rinse the strawberries, blueberries, raspberries, and blackberries under cool water. Pat dry gently with a paper towel. If using strawberries, hull and slice them.
Combine the Berries
In a large bowl, gently toss all the prepared berries together. Set aside to allow the flavors to meld.
Assembly
Serve
In serving dishes, pour a generous amount of the chilled champagne crème anglaise. Top with the mixed wild berries and garnish with fresh mint leaves. Serve immediately.
