Method

Cooking Pasta

1

Boil Water

In a large pot, bring 10 cups of water to a rolling boil.

2

Cook Pasta

Add 1 tablespoon of salt to the boiling water, then add the cavatappi pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

3

Drain Pasta

Once cooked, drain the pasta in a colander and set aside.

Making Cheese Sauce

4

Melt Butter

In the same pot you used for the pasta, melt 4 tablespoons of butter over medium heat.

5

Make Roux

Once the butter is melted, whisk in 1 cup of all-purpose flour. Continue whisking for about 2 minutes until the mixture is slightly golden.

6

Add Milk

Gradually add 4 cups of milk to the roux, whisking continuously to avoid lumps. Cook for about 5-7 minutes until the mixture thickens.

7

Add Cheeses

Lower the heat and add the shredded cheddar cheese, Gruyère cheese, and grated Parmesan cheese. Stir until all the cheeses are melted and the sauce is smooth.

8

Season Sauce

Add garlic powder, 1 teaspoon of salt, and black pepper. Mix well to combine.

9

Combine Pasta and Sauce

Add the drained cavatappi pasta to the cheese sauce. Stir well to coat all the pasta with the cheese sauce.
