Roasting the Peppers

Preheat your oven to 375°F (190°C). Cut the mini peppers in half lengthwise and remove the seeds. Place them on a baking sheet and drizzle with olive oil. Sprinkle with salt and black pepper. Roast in the oven for 15 minutes.

Making the Filling

In a mixing bowl, combine cream cheese, chopped chives, garlic powder, and grated Parmesan cheese. Mix until well combined.

Stuffing the Peppers

After roasting the peppers, remove them from the oven and let them cool slightly. Using a spoon, fill each pepper half with the cream cheese mixture.

Final Bake

Return the stuffed peppers to the oven and bake for an additional 10-12 minutes, or until the cheese is slightly golden and bubbly.
