Enchilada Preparation
Prepare the Filling
In a skillet over medium heat, heat the olive oil. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Add the ground beef or shredded chicken, cumin, salt, and pepper. Cook until the meat is fully cooked and seasoned, about 7-10 minutes. Remove from heat.
Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, spoon some of the filling into the center, and sprinkle with cheddar cheese. Roll the tortilla and place seam side down in the baking dish. Repeat with remaining tortillas and filling.
Bake the Enchiladas
Once all the enchiladas are in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with any leftover cheddar cheese. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
Serve
Remove the enchiladas from the oven and let them cool for a few minutes. Serve hot, garnished with sour cream, avocado, or cilantro as desired.
