Marinating the Pork

In a large bowl, combine the ancho chili powder, guajillo chili powder, cumin, oregano, minced garlic, orange juice, white vinegar, salt, and black pepper.

Add the sliced pork shoulder to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and grill for about 5-7 minutes on each side, until fully cooked and slightly charred.

Once cooked, let the pork rest for a few minutes before slicing it into smaller pieces. Warm the corn tortillas on the grill or skillet.

Place a generous amount of the sliced pork on each tortilla. Top with diced pineapple, chopped cilantro, and finely chopped onion. Serve with lime wedges on the side.
