Chill glass
Place a chilled Champagne flute or tulip glass in the freezer for 5–10 minutes, or fill it with ice water for 2–3 minutes and then discard the ice water. This ensures the sparkling wine stays cold longer.
Add absinthe and syrup
Measure 1 tsp absinthe rouge into the chilled flute. Add 1/2 tablespoon demerara sugar syrup directly on top of the absinthe. The syrup provides sweetness and body to balance the absinthe's herbal bite.
Add lemon
Add 1/2 tsp fresh lemon juice to the flute. This brightens and lifts the drink, integrating with the absinthe's anise notes.
Optional stir
If desired, give the drink one very gentle stir with a bar spoon (1 rotation) to integrate the syrup fully. Use caution — over-stirring will flatten the bubbles.
