Prepare glass and garnishes

Chill and garnish

Chill a large wine glass or rocks glass by filling with ice and set aside while you prepare the ingredients. Pit two green olives and thread them on a small pick. Cut a 1-inch wide strip of orange peel; set aside.

If you prefer a colder drink, place the prepared glass in the freezer for 5–10 minutes after discarding the ice used to chill it.

Mixing the cocktail

Build the cocktail

Discard the chilling ice from the glass. Add 3 large ice cubes to the chilled glass. Pour in 4 oz extra dry Lambrusco followed by 0.5 oz bergamot liqueur.

Add citrus & balance

Add 0.25 oz fresh lemon juice and 0.25 oz fresh grapefruit juice to the glass. If you prefer a slightly sweeter spritz, add 0.25 oz simple syrup (optional). Gently stir once or twice with a bar spoon to combine; avoid over-stirring to preserve bubbles.

Lengthen (optional)

Top the cocktail with 1 oz soda or sparkling water if you want a lighter, more sessionable spritz. Pour gently down the side of the glass to keep effervescence.

Finish & serve

Express oils & garnish

Hold the orange peel over the glass, skin side down, and give it a quick twist to express the oils over the surface. Optionally rub the peel around the rim of the glass, then drop the peel into the drink. Spear the two pitted green olives on a cocktail pick and rest across the rim or drop into the glass.

Serve immediately while bubbly. Provide a short straw or stirrer if desired.
