Crispy Zucchini

Prepare the Zucchini

Wash the zucchini and cut them into 1/4 inch thick rounds. Set aside.

Set up the Breading Station

In three separate shallow bowls, place the flour in the first bowl, beat the eggs in the second bowl, and mix the panko breadcrumbs, grated Parmesan cheese, salt, and black pepper in the third bowl.

Bread the Zucchini

Dip each zucchini round first in the flour, shaking off the excess, then in the beaten eggs, and finally in the breadcrumb mixture, pressing gently to adhere.

Fry the Zucchini

In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded zucchini in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.

Drain and Serve

Remove the fried zucchini and place them on a paper towel-lined plate to drain excess oil. Serve hot with marinara sauce for dipping.
