Method
Preparing the Fish
Bread the Flounder
Set up a breading station: Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third. Season the flour with salt and pepper. Dredge each flounder fillet in flour, dip in egg, and then coat with panko breadcrumbs.
Fry the Fish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded flounder fillets. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Preparing the Fennel Slaw
Make the Slaw
Thinly slice the fennel bulb and grate the carrot. In a bowl, combine fennel, carrot, mayonnaise, lemon juice, salt, and pepper. Toss well to combine.
Making the Tartar Sauce
Combine Ingredients
In a small bowl, mix together mayonnaise, dill pickles, capers, lemon juice, salt, and pepper. Adjust seasoning to taste.
Assembling the Sandwich
Build the Sandwich
Slice the sandwich rolls in half. Spread a generous amount of tartar sauce on the bottom half. Place a piece of fried flounder on top, followed by a scoop of fennel slaw. Top with the other half of the roll.
Serving
Prepare Salad and Fries
Serve the sandwiches alongside a fresh mixed salad and crispy fries. Enjoy!
