Preparation
Prepare the Ingredients
Wash and cut Yukon Gold potatoes into quarters. Shuck the sweet corn and remove kernels from cobs. Chop the bacon into small pieces and roughly chop the fresh basil.
Make Basil Aioli
In a bowl, combine mayonnaise, lemon juice, minced garlic, and olive oil. Mix well and season with salt and pepper to taste. Stir in chopped basil. Refrigerate until ready to use.
Cooking
Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove bacon and set aside, leaving the rendered fat in the skillet.
Serving
Plate the Dish
On each plate, serve a portion of the corn and potato mixture, topped with a salmon fillet. Drizzle with basil aioli and garnish with additional fresh basil.
