Preparation

Cook the Pasta

In a large pot, bring salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside.

Bolognese Sauce

Make the Sauce

In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

Add Garlic and Meat

Stir in the minced garlic and cook for another minute. Add the ground beef and ground pork, breaking it apart with a spoon, and cook until browned.

Incorporate Tomato Paste and Wine

Stir in the tomato paste and cook for 2 minutes. Then add the red wine, scraping the bottom of the pan to deglaze it.

Add Tomatoes and Seasonings

Add the crushed canned tomatoes, oregano, basil, salt, and black pepper. Bring to a simmer and reduce the heat to low. Let simmer for at least 30 minutes, stirring occasionally.

Combine Pasta and Sauce

Once the sauce has thickened, taste and adjust seasoning if necessary. Add the cooked pappardelle to the sauce and toss to coat.

Serve

Serve the pappardelle bolognese hot, garnished with grated Parmesan cheese.
