Salad Cake Preparation

1

Prepare the Crab Mixture

In a large mixing bowl, combine the cooked crab meat, chopped Pepiton, and arugula.

2

Add Wet Ingredients

Add mayonnaise, Cajun seasoning, lemon juice, and minced garlic to the crab mixture. Mix well until all ingredients are thoroughly combined.

3

Incorporate Dry Ingredients

Fold in breadcrumbs, egg, salt, and black pepper. Mix until the mixture holds together but do not overmix.

4

Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes to firm up.

5

Form the Cakes

Once chilled, scoop the mixture into patties (about 1/2 cup each) and shape them into cakes.

6

Cook the Salad Cakes

In a large skillet, heat olive oil over medium heat. Cook the crab salad cakes for 4-5 minutes on each side or until golden brown and crispy.

7

Serve

Serve warm with a side salad or your favorite dipping sauce.
