Turkey Breast Preparation
Prepare the Turkey
Preheat your oven to 325°F (165°C). Pat the turkey breast dry with paper towels.
Season the Turkey
Rub the olive oil all over the turkey breast. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Rub the seasoning mixture generously over the turkey breast.
Roast the Turkey
Place the turkey breast on a roasting pan, and add 1 cup of chicken broth to the bottom of the pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally with juices from the pan.
Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
Gravy Preparation
Collect Drippings
After removing the turkey, pour the drippings from the roasting pan into a measuring cup. Skim off excess fat, leaving about 1 cup of drippings.
Make the Roux
In a saucepan over medium heat, add the turkey drippings and heat until warm. Whisk in 1 tablespoon of all-purpose flour and cook for about 1-2 minutes until it's lightly browned.
Add Broth
Slowly whisk in 1 cup of chicken broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and let it thicken for about 5 minutes.
Season the Gravy
Taste the gravy and season with salt and black pepper to your liking. Remove from heat and serve warm over sliced turkey.
