Preheat your oven to 350°F (175°C). Spread the cubed French bread on a baking sheet and toast in the oven for about 10-15 minutes until lightly golden and crisp. Remove from the oven and set aside.

In a large skillet over medium heat, add the Italian sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and cooked through. Remove the sausage from the skillet and drain excess fat.

In a large mixing bowl, combine the toasted bread cubes, cooked sausage, sautéed vegetables, dried sage, dried thyme, salt, black pepper, and chopped parsley. Mix well.

In a separate bowl, whisk together the chicken broth and beaten eggs. Gradually pour this mixture over the bread and sausage mixture, tossing gently until everything is evenly moistened.

Melt the butter and pour it into a 9x13 inch baking dish. Spread the stuffing mixture evenly in the dish. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and crispy.
