Preparation and Cooking

Prepare the Slaw

In a bowl, combine the shredded cabbage, grated carrot, mayonnaise, lemon juice, salt, and pepper. Mix well and set aside to chill.

Prepare the Catfish

In a shallow dish, combine cornmeal, flour, cayenne pepper, salt, and black pepper. In another dish, pour the buttermilk. Dip each catfish fillet into the buttermilk, then dredge in the cornmeal mixture, ensuring it's well coated.

Fry the Catfish

In a large skillet, heat oil over medium-high heat. Once hot, carefully add the catfish fillets and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich

Toast the sesame buns on a griddle until lightly golden. Place a fried catfish fillet on the bottom half of each bun, top with lemon slaw, dill pickles, and a generous dollop of remoulade. Cover with the top half of the bun.

Serve

Serve the fried catfish sandwiches with a side of french fries.
