Method
Preparation of Wings
Prepare the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. Set aside.
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Mix well to ensure an even distribution of spices.
Coat the Wings
Dredge the chicken wings in the flour mixture until evenly coated. Shake off any excess flour and set them aside on a plate.
Frying the Wings
Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.
Fry the Wings
Carefully add the coated chicken wings to the hot oil in batches. Fry for about 8-10 minutes or until golden brown and cooked through, turning occasionally. Remove the wings and let them drain on a paper towel-lined plate.
Preparing Sauces
Buffalo Sauce
In a small saucepan, melt the butter over low heat. Stir in the hot sauce, garlic powder, and vinegar until well combined. Remove from heat.
Mango Habanero Sauce
In a bowl, mix the mango puree, finely chopped habanero peppers to taste, and lime juice. Adjust the spiciness according to your preference.
Pineapple Jalapeño Sauce
In a bowl, combine pineapple juice, finely chopped jalapeño peppers to taste, and honey. Mix well.
Serving
Toss in Sauce
Choose your desired sauce and toss the fried wings in the sauce until evenly coated.
Serve
Serve the wings hot with your choice of dipping sauce on the side.
