Grilling Corn

Prepare the Corn

Remove the husks and silk from the fresh corn on the cob. Rinse under cold water.

Grill the Corn

Preheat your grill to medium-high heat. Brush the corn with olive oil and season with 1 teaspoon of the Cantina spice blend. Grill the corn for about 10-15 minutes, turning occasionally until charred and cooked through. Remove from the grill and let cool slightly.

Making Chipotle Aioli

Combine Ingredients

In a medium bowl, mix together the mayonnaise, chipotle peppers (finely chopped), lime juice, and minced garlic. Stir until well combined and smooth.

Adjust Flavor

Taste the aioli and add salt or more lime juice if needed. Set aside.

Assembling Elote en Vaso

Cut and Serve

Once the corn is cool enough to handle, cut the kernels off the cob and place them in a serving cup or bowl.

Add Chipotle Aioli

Drizzle the chipotle aioli generously over the corn kernels.

Top with Cheese and Spices

Sprinkle the crumbled Cotija cheese over the top, followed by the remaining Cantina spice blend and chopped cilantro.

Garnish and Enjoy

Serve with lime wedges on the side for squeezing over the elote before eating.
