Chips

1

Prepare the Potatoes

Wash and peel the russet potatoes. Slice them thinly using a mandoline or a sharp knife to about 1/8 inch thickness.

2

Soak the Potato Slices

Place the sliced potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

3

Heat the Oil

In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

4

Fry the Chips

Carefully add a handful of dried potato slices to the hot oil. Fry in batches for about 3-5 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain. Sprinkle with salt while still hot.

Queso

5

Melt the Cheese

In a saucepan over medium heat, combine Velveeta cheese and cream cheese. Stir until melted and smooth.

6

Add Milk and Salsa

Gradually add milk to the cheese mixture, stirring continuously until smooth. Mix in the salsa. Heat until warm and well combined.

Assembly

7

Prepare Toppings

Chop the cooked bacon into small pieces. Slice the jalapeños and chop the green onions.

8

Assemble the Loaded Chips

On a large serving platter, layer the fried potato chips. Pour the warm queso over the chips. Top with bacon pieces, sliced jalapeños, chopped green onions, and a dollop of sour cream.

9

Serve

Enjoy your loaded fried potato chips immediately while they're hot and crispy!
