Preparation

Cook the Brown Rice

Rinse 1 cup of brown rice under cold water. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it cool.

Chop the Vegetables

Finely chop 1 medium onion and 1 medium carrot. Trim the ends of 1 cup of green beans and cut them into small pieces. If using fresh or frozen green peas, measure out 1 cup and set aside.

Mixing

Combine Ingredients

In a large mixing bowl, combine the cooked brown rice, chopped onion, carrot, green beans, and green peas. Mix well.

Add Seasonings

Sprinkle 1 tsp of salt, 1 tsp of black pepper, 1 tsp of garlic powder, and 1 tsp of cumin into the mixture. Stir until evenly distributed.

Add Flour

Gradually add 1 cup of flour to the mixture, stirring until it holds together and can be formed into patties.

Cooking

Form Patties

Take a handful of the mixture and shape it into a patty. Repeat until all the mixture is formed into patties.

Cook the Patties

Heat 2 tbs of olive oil in a skillet over medium heat. Once hot, add the patties to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and crispy.

Serving

Serve the Veggie Burgers

Remove the patties from the skillet and place on paper towels to drain excess oil. Serve warm on burger buns with your favorite toppings such as lettuce, tomato, avocado, or sauce.
